Food production clean room cleanliness level and division, wear clean gloves, food hygiene quality is directly related to people's physical fitness and life safety. Factors affecting the quality of food hygiene are the production of raw materials and accessories, production technology and production environment. The food production environment includes equipment (workstations), personnel and air that may be in contact with foodstuffs. The purpose of safe production control is to prevent food from being processed under unsanitary conditions. The pollution control of clean rooms (areas) for food production is a key link in the control of food production environment. The control targets include dust particles and microbes.

Compared with the original specification GBJ73-84, the air cleanliness level increased from four levels to nine levels, the control particle size from 2 (0.5μm and 5μm) increased to 6 (0.1μm, 0.2μm, 0.3μm, 0.5 μm, 1 μm, and 5 μm), and the air cleanliness level allows the use of intermediate levels between integers such as 1.0, 1.1, 1.2 ... 8.9, 9.0.

Note: PC / M3 is the number of particles per unit volume of suspended particles in the air.

Air clean is the clean environment, the amount of air containing suspended particles to the extent of the amount of dust in the air is usually high air cleanliness, low dust concentration is high air cleanliness. By dividing the concentration of suspended particulates in the air, the cleanliness level in the clean room and the associated controlled environment is determined by the maximum permissible number of particles per cubic meter of air to determine the air cleanliness level.
